Vegetables and fiber first. Protein and fat second. Carbohydrates, like bread, rice, potatoes, or pasta, last. And ideally, you leave about ten minutes between that first course of vegetables and protein and the carbohydrate course. This isn't just a theory somebody came up with. It has been tested, repeatedly, in real clinical studies. In one study, researchers had people with type 2 diabetes eat vegetables and protein ten minutes before eating carbohydrates, and compared that to eating the exact same foods in the opposite order. The carbohydrate-last group had significantly lower blood sugar spikes, and the effect lasted up to three hours after the meal. In another study, a group with prediabetes followed a carbohydrate-last approach, and researchers measured over a fifty percent reduction in their blood sugar spike compared to eating carbs first. That same study found something else interesting. The hunger hormone, called ghrelin, stayed more suppressed three hours later in the group that ate carbs last, meaning they felt fuller, longer, on the exact same meal. A separate study looked specifically at pregnant women managing gestational diabetes. The women were asked to eat vegetables first, then protein, then carbohydrates last, for two weeks. Their blood sugar after meals dropped nearly six percent, and their insulin levels dropped by eight to eleven percent, just from changing the order they ate the same foods in. Number two, if you can, give yourself about a ten-minute gap between that first course and your carbohydrates, even something as simple as finishing your salad before the bread basket comes out.
