Quick Red Beans & Rice (from canned beans) The Farmers Table Prep time: 20 minutes Cook time: 45–60 minutes Serves: 5–6 Ingredients 1 package smoked sausage (beef smoked sausage or andouille), about a pound, sliced thin or into half-moons 2 tablespoons oil or rendered sausage fat 1 large yellow onion, diced 2–3 ribs celery, diced 1 green bell pepper, diced (optional but traditional) 5 cloves garlic, minced 4 (15 oz) cans red beans, drained and rinsed 4 cups chicken broth 1 tablespoon paprika 1 tablespoon dried thyme 1 tablespoon dried oregano 2 teaspoons onion powder 2 teaspoons garlic powder ½ teaspoon cayenne pepper, more to taste Salt and black pepper, to taste Rice, for serving 3–4 cups uncooked long-grain white rice, cooked according to your method Instructions 1. Heat a large pot or Dutch oven over medium heat. Add the sausage and cook until well browned on both sides. Remove the sausage to a plate and set aside, leaving the fat in the pot. 2. Add the onion, celery, and bell pepper (if using) to the pot. Cook in the sausage fat over medium heat for 4–5 minutes, until softened. 3. Add the garlic and cook for about 1 minute, just until fragrant. Do not let it burn. 4. Add the drained beans to the pot along with the chicken broth. Stir to combine. 5. Season with paprika, thyme, oregano, onion powder, garlic powder, cayenne, and several cracks of black pepper. Start with about 1 teaspoon salt, keeping in mind the saltiness of your broth and sausage. Adjust later. 6. Using a potato masher or spoon, mash some of the beans directly in the pot. You are not trying to mash all of them, just enough to help create a creamy texture as it cooks. 7. Return the sausage and any accumulated juices to the pot. Reduce heat to medium-low and simmer uncovered for 45–60 minutes, stirring occasionally. Mash a few more beans as it cooks to encourage thickening. 8. As the beans simmer, the liquid will reduce and thicken into a gravy-like consistency. If the beans thicken too quickly, lower the heat and stir more frequently rather than adding additional liquid. 9. Taste and adjust seasoning with additional salt, pepper, or cayenne as needed. 10. Serve hot over cooked rice.
