In this video, I take you to a lively Muslim food market in Xining, Qinghai, a highland city in northwestern China. The market is filled with colorful local snacks, traditional Muslim cuisine, fresh fruits, handmade flatbreads, and many hearty highland grain dishes. While many parts of China are already extremely hot during summer, Xining’s highland climate still feels cool, and the city can even occasionally see snowfall. That is also why local people here especially enjoy rich, filling foods like noodles, baked breads, and other hearty wheat dishes. The crispy fried fish is incredibly aromatic, while the crunchy deep-fried pasta snacks are so addictive that it’s hard to stop eating them. The market is also packed with refreshing cold noodles, freshly baked wheat flatbreads, crusty giant breads, rose layer cakes, and many traditional foods made from Highland Barley, filling the entire market with warm aromas and lively local atmosphere.
