Bacon & Tomato Pie 2-3 ripe tomatoes, depending on size salt and pepper, to taste 9 -inch pie crust, blind baked and cooled 1/2 cup + 1/3 heaping cup, shredded mozzarella cheese 1/2 heaping cup shredded cheddar cheese 1/2 cup onion, finely diced 1/2 cup bacon, cooked and crumbled 2 Tablespoons basil, chopped 1 cup mayonnaise 18 Ritz crackers, crushed 2 Tablespoons butter, melted Preheat oven to 350° Wash and slice your tomatoes. Place the tomato slices on several layers of paper towels and allow to drain. Tomatoes slices need to sit for at least 10 to 15 minutes to release as much liquid as possible. Place 1/3 cup of shredded mozzarella in the bottom of your baked piecrust. Spread the cheese to cover the bottom of the crust as much as possible. Top with one or two layers of tomato slices, depending on the thickness of the slices. Salt and pepper each layer to taste. In a medium bowl, stir together the remaining cheeses, onion, bacon, basil, and mayonnaise. Spread this mixture over the tomato slices. In a separate bowl, stir together the cracker crumbs and melted butter. Sprinkle evenly over the cheese and mayonnaise mixture. Bake for about 25 minutes or just until the pie is heated through and the top is lightly brown. After removing the pie from the oven, garnish the top very lightly with a little extra chopped basil.
