There's something wonderfully magical about discovering your apple tree is full of fruit after years of producing nothing at all... In today's cosy baking video, I head into the garden with my little basket to pick fresh apples before attempting a homemade apple pie using my Nan's recipe book from the late 1970s. Along the way, I also attempt to make shortcrust pastry completely from scratch, and although I have made it before, it surprises me every single time... While apple pie often conjures images of old American farmhouses and pies cooling on windowsills, the earliest recorded apple pie recipe actually comes from 14th-century England. So today we're taking inspiration from both history and family tradition to create a simple, comforting dessert using homegrown apples and a recipe lovingly passed down through the generations. It wasn't without its little mishaps—from apples browning far quicker than expected to wrestling with homemade pastry—but that's all part of the joy of learning traditional skills in the kitchen. The pie may not have been picture perfect, but it was full of rustic charm... and, thankfully, absolutely delicious. Recipie 🥧 Apple pie: 350 grams or 12 ounces of rich shortcrust pastry 5 medium cooking apples, peeled, cored, and thinly sliced 10 milliliters or 2 teaspoons of ground cinnamon 50 grams or 2 ounces of apricot jam Divide the dough into two unequal pieces. Roll out the larger piece and line a 23 centimeter or 9 inch ovenproof pie dish. Arrange the apple slices in the case, sprinkle over the cinnamon and dot with the jam. Roll out the remaining dough and cover the dish. Crimp the edges to seal, trimming off any excess. Cut a cross in the center and brush with a little milk and sugar. Put into the oven, preheated to hot, (220 degrees Celsius or 425 degrees Fahrenheit or gas mark 7) and bake for 15 minutes. Reduce the oven temperature to moderate, (180 degrees Celsius or 350 degrees Fahrenheit or gas mark 4) and continue to bake for 25 to 30 minutes or until the pastry is golden brown. Shortcrust Pastry: 225 grams or 8 ounces of flour A pinch of salt 125 grams or 4 ounces of butter, margarine or cooking fat About 45 to 60 milliliters or 3 to 4 tablespoons of cold water Sift the flour and salt into a mixing bowl. Rub in the fat until the mixture resembles fine breadcrumbs. Add the water and mix to a dough. Too much water will result in tough pastry. Chill for 15 minutes before using for the best results. Note, when a recipe states 225 grams or 8 ounces of shortcrust pastry, it means pastry made with 225 grams or 8 ounces of flour.
