RECIPE LINK: https://www.collardvalleycooks.com/bread-recipes-186676.html MASTER COOKBOOK RECIPE # 160 CHEESE FRITTERS Ingredients: 1 tsp Worcestershire sauce 1 egg, beaten 1/2 cup milk 1 green onion, diced dash hot sauce, optional 2 cups biscuit mix, Recipe #112 (see below) 1 1/2 cups American cheese, cut into small cubes. Cheese should be very cold prior to frying. Instructions: Mix the first five ingredients. Add the flour and stir well. Fold in the cheese. Drop by teaspoons into hot oil. Cook at 365 degrees F until golden brown. Remove and place on paper towels. Enjoy! If you do not have biscuit mix, use 2 cups of self-rising flour combined with 1/4 cup of butter or shortening. Cut the shortening into the flour until it reaches pea-sized crumbs, then use this mixture instead of biscuit mix in the recipe. MASTER COOKBOOK RECIPE # 112 BISCUIT MIX Ingredients: 2 cups self-rising flour 1/4 tsp baking soda, optional 1/8 cup butter-flavored shortening (or butter at room temperature) 1/8 cup vegetable shortening, Crisco Instructions: In a mixer with a paddle attachment, add flour, baking soda, shortening, and mix on low until shortening is about pea sized. Pour into a container and repeat until you have 8 cups of biscuit mix. Store in an airtight container for up to 4 months. Note: If you substitute butter for shortening, it must be refrigerated.
