Grab some bread to soak up the juice at the bottom of the plate and you've got yourself a perfect bite. INGREDIENTS 3 oranges 2 fennel bulbs 1 red onion Extra virgin olive oil Salt & black pepper Black olives Fennel fronds for garnish DIRECTIONS 1. Thinly slice the fennel bulb and red onion. Soak them in cold salted water for 10 minutes. 2. Peel the oranges and slice them into circles. 3. Chop a handful of the fennel fronds and set aside. 4. Arrange the fennel and onion on a serving platter. Layer the orange slices over the top. 5. Scatter the black olives around the platter. 6. Top with fresh fennel fronds, a crack of black pepper, and a generous drizzle of extra virgin olive oil.
