Today, I’ll show you how to make *Gohei-mochi*. It’s a delicious regional specialty made easily from rice, featuring a wonderful chewy texture! You can simply cook them in a frying pan, and they are coated in a savory-sweet miso glaze that makes them absolutely addictive. They make a great autumn snack or light meal, so I hope you give this recipe a try. ----------------------------------------------------------------------------------------- 【材料】（4本分） ・ご飯 400g ・味噌 大さじ1.5 ・砂糖 大さじ1 ・醤油 大さじ1/2 ・みりん 大さじ2 ・くるみ 15g ・いりごま 小さじ2 【作り方】 1.すり鉢でくるみと炒りごまをすり潰す。 2.味噌、醤油、砂糖、みりんを加えて混ぜる。 3.ご飯の8割をしっかりめに潰し、残りを加えて混ぜ4等分にする。 4.ラップの上にご飯をのせ割り箸をおきわらじ形に整える。 5.フライパンに油（分量外）をひき、両面に焼き色をつける。 6.味噌を薄く塗り、焦がさないように焼き取り出す。 7.残りの味噌をフライパンに入れみりんのアルコールを飛ばす。 8.五平餅に塗り完成。 【ingredients】 ・400g Rice ・1.5 tbsp Miso paste ・1 tbsp Sugar ・1/2 tbsp Soy sauce ・2 tbsp Mirin ・15g Walnuts ・2 tsp Toasted sesame seeds 【Instructions】 1. Grind the walnuts and toasted sesame seeds in a mortar. 2. Add the miso, soy sauce, sugar, and mirin, and mix well. 3. Mash about 80% of the rice thoroughly, then mix in the remaining rice and divide the mixture into four equal portions. 4. Place a portion of rice on plastic wrap, lay a pair of split chopsticks against it, and shape it into a *waraji* (straw sandal) form. 5. Heat oil (not included in the ingredient list) in a frying pan and brown both sides of the rice cakes. 6. Spread a thin layer of the miso mixture over them and grill briefly—being careful not to let it burn—then remove from the pan. 7. Add the remaining miso mixture to the pan and cook briefly to evaporate the alcohol from the mirin. 8.
