This dish is a fantastic way to enjoy a hearty meal that’s both satisfying and packed with the unique taste of Korean cuisine. Gochujang is a key ingredient in Korean cuisine, known for its rich, spicy, and slightly sweet taste. Made from red chili powder, glutinous rice, fermented soybeans, and salt, this thick red paste adds depth and heat to dishes like bibimbap, tteokbokki, and fried rice. Its unique flavor and versatility have made it popular worldwide and essential for exploring Korean dishes. INGREDIENTS: • 250 gm chicken (chicken breast or thigh cut into bite-size pieces) • 1 tsp gochugaru (Korean chili powder), Kashmiri chili powder, or red paprika powder • 2 tsp soy sauce • 1/2 tbsp oil • 2 eggs • 5 gm (3-5 cloves) chopped garlic • 60 gm onion chunks • 50 gm cabbage chunks • 50 gm shredded carrots • 1 tbsp gochujang (see notes for substitute) • 2 tbsp plus 1 tsp soy sauce • 1 tsp sesame oil • 1 tsp roasted white sesame seeds • 400 gm cooked rice • Chopped green onions (for garnish) Notes: Gochujang Substitute: • 1 tsp soy sauce • 1 tsp sesame oil • 1 1/2 tsp Kashmiri chili or red paprika (to make it spicier, add an additional ½ tsp of chili) • 1/2 tsp sugar (to add a touch of sweetness) Mix all these ingredients well, and you should have a pretty close substitute to gochujang Process: 1. Marinate the Chicken: Place your chicken in a bowl, add some gochugaru or red chili powder, and soy sauce. Mix well and let it sit for about 30 minutes. 2. Cook the Chicken: Heat a pan on high. Add oil, then spread out the marinated chicken. Let it cook undisturbed for a few minutes. Stir-fry until the chicken is fully cooked, then set aside. 3. Prepare the Eggs: In the same pan, crack in the eggs (you can add a bit of oil if needed). Let them cook undisturbed for a moment, then scramble until they start to set. Once done, transfer to a plate and set aside. 4. Cook the Vegetables: Using the same pan, heat some oil on high. Add chopped garlic and sauté briefly. Add chunks of onion, chunks of cabbage, and shredded carrots. Sauté quickly on high heat. 5. Add Sauces and Mix: Stir in gochujang and soy sauce. Mix everything well and sauté for a brief moment. 6. Combine Ingredients: Lower the heat. Add the cooked rice, the prepared chicken, and the scrambled eggs. Stir-fry everything until well mixed and the rice is nicely coated. 7. Finish and Serve: Drizzle with sesame oil and sprinkle roasted white sesame seeds. Mix well and remove from heat.
