Every family has their own version and this is the way my family made it. It tastes like summer in southern Italy and once you try it you'll be making it all summer long. Whether you serve it as a healthy Mediterranean side dish alongside grilled meats or fish, or just on its own with some bread, it never disappoints. This easy one pan vegan and vegetarian Italian recipe is Italy's answer to ratatouille and it might be better. Ingredients: 1 eggplant, cubed 2 zucchini, cubed 2 Yukon Gold potatoes, cubed Red, yellow, and orange peppers, cubed 1/2 lb cherry or grape tomatoes, halved 1 cup tomato passata 3 garlic cloves smashed Olive oil Salt and pepper Fresh basil Directions: 1. Heat a generous amount of olive oil in a large pan. Add the potatoes and cook on high heat for 5 minutes until crispy. 2. Add the eggplant, garlic, zucchini, and peppers. Cook for another 5 minutes on high heat. 3. Add the tomatoes, passata, salt, pepper, and fresh basil. Let it simmer for 5 to 10 minutes until everything is tender and the flavors come together. 4.
