πŸ₯• HIGH-PROTEIN CARROT CAKE FOR BREAKFAST 🍰 πŸ”₯ 400 Calories, 30g Protein & Ready in Minutes!! I lost 66 lbs eating HUGE portions of delicious food β€” including CAKE FOR BREAKFAST! 😍 This lazy microwave carrot cake is one of my favourite ways to sneak vegetables into breakfast without feeling like I'm eating vegetables at all! It's fluffy, naturally sweet, packed with carrot cake flavour and covered in the most delicious citrusy orange frosting. And the entire MASSIVE bowl is only around 400 calories with 30g of protein! 🀯 Ingredients: πŸ₯• 2 small carrots 🍌 1 banana πŸ₯› A splash of unsweetened soy milk 🍎 A splash of apple cider vinegar 🌼 Vanilla extract 🌾 Approximately β…“ cup self-raising flour πŸ’ͺ 1 scoop vanilla protein powder (optional) πŸ₯„ A little baking powder (if replacing protein powder) 🀎 Plenty of cinnamon πŸ‡ 1 tsp raisins For the Orange Frosting: πŸ₯£ Alpro Greek-style soy yoghurt 🍊 Fresh orange zest 🍊 A small squeeze of orange juice 🍯 Sweet drops or sweetener of choice Method: 1️⃣ Grate two small carrots directly into a large microwave-safe bowl. This adds SO much volume before we've even started! 2️⃣ Add one banana and mash everything together with a fork. The banana acts as an egg replacement while adding natural sweetness. 3️⃣ Pour in a splash of soy milk, apple cider vinegar and vanilla extract. Mix until combined. 4️⃣ Add approximately β…“ cup self-raising flour and one scoop of vanilla protein powder. 5️⃣ If you're skipping the protein powder, simply replace it with a little extra flour and add some baking powder. 6️⃣ Add LOTS of cinnamon and about a teaspoon of raisins for that classic carrot cake flavour. 7️⃣ Mix until you have a thick, delicious cake batter, then flatten it evenly in your bowl. 8️⃣ Microwave for a few minutes until the cake is cooked through and beautifully fluffy. Cooking time will depend on your microwave. 9️⃣ While your cake cooks, mix Greek-style soy yoghurt with fresh orange zest, a tiny squeeze of orange juice and a few sweet drops. πŸ”Ÿ Spread the frosting generously over your carrot cake and DIG IN! 🍰🍊 The combination of warm, fluffy carrot cake and that sweet citrusy frosting is absolutely INCREDIBLE! And the best part? You're getting a massive, satisfying breakfast with vegetables, protein and all the flavours of your favourite dessert. πŸ’š Want more sweet recipes that helped me lose 66 lbs without giving up the foods I love?
