Kallappam ( vellayappam) is a traditional Christian dish in kerala and it look similar to a pancake. This soft delicious pancake is made from rice, toddy and coconut. Toddy (kallu) is a fermenting agent that produced from palm of the coconut tree. So it is called palm wine. It is a natural alcohol. In kerala toddy is used as a substitute of yeast for fermenting appam. Preparation for making Kallappam 2 ladleful rice flour 2 tbsp sugar 100ml toddy 1/2 coconut grinded 1/2 tsp salt 2 to 3 tbsp rice flour 1 cup water Method Grind the grated coconut by adding required amount of water to fine paste and keep it aside. Boil rice flour in 1 cup water till it thickens and reduces to 3/4 cup stirring continuously so that it yields a creamy thick consistency and set aside for cool. After cooling the rice porridge, add the rice flour and grinded coconut. Mix well without lumps. Add toddy inbetween with required sugar and salt. And make a smooth batter. Set aside 5 to 8 hours for fermentation. Heat skillet or nonstick pan. Then spread some oil, add ladleful batter and cook both sides. It will take about 1 or 2 minutes.
