Most people when they start out are told to stick to AWB (Auto White Balance), and while that's okay for some situations, it can be a nightmare for others. There is something called AWB lock that essentially stops your WB from changing during your shot, but if you forget to lock it (like I have a few times), then chances are your colours will be shifting all over the shop. The Panasonic S5 (like most other cameras on the market) has a bunch of White Balance presets that are actually really useful when you get started setting your Custom WB in camera. In fact, I still use the sunny and cloudy presets all the time as they're really good and very accurate in my testing.
