I was not sure how this recipe for homemade lunch meat would turn out, but it was epic! The turkey lunch meat slices were so flavorful and the whole process is so easy. Hardware I Used: Lunch Meat Maker: https://amzn.to/3I5LDWi Slicer: https://amzn.to/3SHLflJ RECIPE: 1 pound ground turkey thigh 1/2 teaspoon each onion & garlic powder 1 teaspoon salt Fresh black pepper 1 teaspoon dried herbs, like thyme and rosemary Bring a pot of water to a bare simmer and make sure the water level comes almost to the top of the lunch meat canister. In a large bowl, add the turkey meat, onion and garlic powder, salt, pepper, and mix very well with your hands. Spray the inside of the metal jar with avocado or olive oil, and sprinkle the dried herbs all around the inside of the canister. Add the seasoned turkey meat and press it down with the remaining attachments from the metal canister. Place is simmering water, put a thermometer in the top, and cook until the internal temperature is 165F. It should take about one hour and twenty minutes. Don’t boil the water, it should be a bare simmer. Once the meat is cooked, carefully take out of the water and allow to cool, this will take a while. Transfer to the fridge overnight. Remove the top potion from the canister, run a knife around the edges, and shake out the turkey meat. Use a slicer or mandolin to slice the meat into thin pieces. Meat will keep in the fridge for 7 days. I don’t recooked d freezing, because it will affect the texture.
