RECIPE: 8 boneless & skinless chicken breasts 1 cup almond flour 1 cup pork rind flour 1 teaspoon each onion, garlic powder, dried thyme 3 eggs 1 cup tapioca or arrowroot starch Salt & pepper Marinara sauce Fresh mozzarella cheese Parmesan cheese Extra virgin olive oil Gently pound the chicken breasts so they are even and flat. Add the almond flour, pork rinds, onion powder, garlic powder, thyme, 1/2 teaspoon salt, and a few cracks of pepper to a baking dish. To another dish, add the eggs and 3 tablespoons of water, mix well. To a third dish add the tapioca starch. Season the chicken breast with salt and pepper on both sides then place in the tapioca. Dredge well on both sides then place in the egg mixture. Dredge both sides in egg, shake off excess, and place in almond flour mixture. Press the flour well on both sides then move to a sheet pan that has a rack set inside. Allow the chicken to rest for 15 minutes before frying to allow the crust to dry. Preheat oven to 400F and add enough oil to coat the bottom of a pan and preheat over medium heat until temperature is 335F. Pan fry two chicken breasts at a time until golden brown on both sides then place on a clean rack set inside a sheet pan. Top all of the chicken with a generous amount of marinara sauce, mozzarella cheese, parmesan cheese, and bake for 15-20 minutes, or until internal temperature is 155F. Turn the broiler on and cook until the cheese is bubbly. Serve the chicken parmesan and enjoy!
