INGREDIENTS: 500g (1 lb) Yukon gold potatoes, cubed 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 peperoncino (chili pepper), chopped 1 red onion, sliced 1 cup cherry tomatoes, halved Fresh basil Salt Extra virgin olive oil 1 shot DolceAgro (or 1 tbsp white wine vinegar + 1 tbsp sugar) INSTRUCTIONS: 1. Heat olive oil in a large frying pan over medium heat. 2. Add the cubed potatoes and cook, stirring occasionally for a few minutes. 3. Add the sliced peppers and the chili pepper. Stir often until softened. 4. Add the onions and the cherry tomatoes, DolceAgro, basil, and salt. Mix well. 6. Simmer until the tomatoes fall apart and the sauce comes together. 7.
