Sift gram flour in a large bowl to remove lumps. Set the sifted flour aside. 2. Grind carom seeds slightly in a mixer. Add garlic, coriander powder, cumin powder, red chilli powder, turmeric powder, and salt. Grind everything together into a paste. 3. Pour water gradually into the ground masala paste and blend well. Strain the prepared masala water through a sieve into the sifted gram flour, discarding any coarse garlic residue remaining on top. 4. Mix the flour and strained masala water evenly to form a smooth, soft dough consistency. 5. Heat oil in a pan over medium flame. Fill the kitchen press equipped with a medium shev disc with the prepared dough. 6. Press the dough directly into the hot oil in circular motions to form shev. Fry evenly on medium flame until crisp, then flip and fry the other side.
