My friend, James, teaching me how to make Taiwanese Popcorn Chicken! CHICKEN: 1.5 pds of skinless boneless chicken tigh ( diced into 1 - 1.5 inch square pieces) 2.5 tsps of grated fresh garlic 1 tsp of grated fresh ginger 1 egg white 4 sprigs of green onion stems (lightly smashed) 3 tsp of corn starch 2 tsp of rice flour 1.5 tsp of taiwnanese 5 spice powder 1 tbsp of taiwanese soy paste 1.5 tbsp of soy sauce 1/4 tsp of white pepper 1/4 tsp of MSG 1/4 tsp of magic chicken powder 1/4 tsp of onion powder 1/2 tbsp of white granulated sugar 2-4 sprigs of FRESH basil picked and set aside (Thai basil is preferred but italian wil work in a pinch) -------------------- Finishing Powder mix for the chicken 1 tsp of dry Thai chili Powder (cayenne will work as well but will not be as spicy) 1 tsp MSG 1/2 tsp of salt 1/2 tsp of white pepper 1/2 tsp of garlic powder 1/4 tsp of onion powder 1 pinch of 5 spice powder Combine and set aside --------------------- Chicken Dredge: 1/2 bag of coarse potato starch 1/2 bag of coarse sweet potato starch (it is important to get at least 1 type of coarse potato starch this is what gives the crunch on the chicken) ---------------------- Process: In a Mixing bowl combine all dry ingredients first from the CHICKEN catagory Add the chicken then all the wet ingredients let rest covered for at least 2 hours or better yet overnight Pre-heat a pan of oil to 350 degrees Prep a sheet pan with the chicken dredge mixture Remix the marinated chicken to ensure the wet dege is evenly distributed Working in batches, drop and roll the chicken into the dry dredge, make sure to cover each piece as well as possible fry chicken for about 5-10 minute or until golden brown and crunchy. Make sure the internal temp of the chicken is about 165 Degrees fry the fresh basil in the oil for literally 5 seconds. What we want is the basil to not be crunchy but rather just wilted In a large mixing bowl combine the fried chicken, basil, and all of the finishing powder. Toss and serve with a ice cold beer! #shorts #TaiwanesePopcornChicken #TaiwaneseFood #StreetFood # My cooking and camera gear: https://kit.co/lisanguyen My other socials: Instagram: https://instagram.com/its.lisanguyen Twitter: https://twitter.com/itslisanguyen Discord: https://discord.com/invite/jS5TRKZrN6 TikTok: https://tiktok.com/@itslisanguyen
