🌿 Summer Spicy Chicken Salad 🌿 If you’re looking for a fresh, high-protein meal that’s full of flavor, this Summer Spicy Chicken Salad is one of my favorites. Made with organic chicken, garden herbs, homemade mayo, and a touch of spice, it’s perfect for lunch, meal prep, or a light dinner. Ingredients * 6 organic boneless, skinless chicken breasts * Fleur de sel salt (or your favorite salt) * Chicken seasoning of your choice * Paprika * Dried thyme, crushed * Dried basil, crushed * Homemade mayonnaise * Chopped hard-boiled eggs * Chopped dried cherries * Green onion tops, chopped * Fresh garlic, minced * Hot sauce (to taste) Directions 1. Preheat your oven to Broil (500°F). 2. Line a baking sheet with parchment paper. Trim any excess parchment so it doesn’t extend beyond the pan. This is an important safety step because exposed parchment can scorch or catch fire under the broiler. 3. Season the chicken breasts with fleur de sel, chicken seasoning, paprika, crushed dried thyme, and crushed dried basil. 4. Place the chicken on the prepared baking sheet and broil (don’t bake) for 5–10 minutes, depending on your oven and the thickness of the chicken. Broiling helps keep the chicken tender and juicy while giving it beautiful caramelization. 5. Once cooked, allow the chicken to cool slightly, then chop or shred it. 6. In a large bowl, combine the chicken with homemade mayonnaise, chopped hard-boiled eggs, dried cherries, green onion tops, fresh garlic, and hot sauce. 7. Stir until everything is evenly coated and well combined. 8. Serve immediately at room temperature, or refrigerate for a few hours to let the flavors come together before serving. ✨ Why broil instead of bake? Broiling cooks the chicken quickly, helping it stay juicy while developing delicious color and flavor. You’ll notice the parchment paper browns under the broiler—that’s completely normal as long as it’s trimmed to the pan. This protein-packed chicken salad is perfect for meal prep, lunch, or a light summer dinner. 💬 Would you make yours mild or extra spicy? 💾 Save this recipe and share it with someone who loves simple, homemade meals!
