If you love soft, juicy, melt-in-the-mouth mutton kebabs, this homemade recipe is for you! ā¤ļø Made with minced mutton, soaked chana dal, aromatic whole spices, golden fried onions, and pan-fried in pure ghee, these kebabs are beautifully crisp on the outside while remaining incredibly soft and succulent inside. This isn't a traditional Shami Kebab or Galouti Kebabāit's my family's version that brings together the best of both worlds. The secret lies in pressure cooking the mutton with whole spices, coarsely grinding the mixture for the perfect texture, and finishing the kebabs on a hot tawa with ghee until golden brown. Serve them hot with fresh mint chutney, spicy masala lachha onion, and flaky parathas for an unforgettable meal. š„ Ingredients 500 g minced mutton 150 g chana dal (soaked) 3 medium onions, fried until golden brown Ginger & garlic 6ā7 whole dried red chillies 1 black cardamom (badi elaichi) 3ā4 green cardamoms (chhoti elaichi) 1 star anise 1 bay leaf 1 small piece cinnamon (dalchini) 4ā5 kebab chini (cubeb pepper) 1ā2 blades javitri (mace) 1 tsp shahi jeera (black cumin) Salt to taste A little water from the soaked chana dal Optional Fresh coriander leaves Fresh lemon juice A few drops of kewra water šØāš³ Method Add the minced mutton, soaked chana dal, whole spices, ginger, garlic, dried red chillies, salt, and a little water to a pressure cooker. Pressure cook for about 10 minutes, then check that the mutton is perfectly tender. Add the fried onions and coarsely grind the mixture. Avoid making it into a smooth pasteāthe coarse texture keeps the kebabs juicy. Mix in coriander, lemon juice, and kewra water if using. Shape into kebabs. Pan-fry in ghee until beautifully golden brown on both sides. (Oil works too, but ghee gives a richer flavour.) Serve hot with mint chutney, masala lachha onion, and fresh parathas.
