Chicken akhni for a crowd by @fehmz (Serves 20-25 people) 250ml ghee 6 pieces cinnamon stick 3 tsp cumin seeds 6 cardamom pods 7-8 finely chopped/grated onions salt, to taste 1 litre water 4 kg chicken pieces 4 tablespoon red ginger garlic masala 1 tblsp green chilli/masala 2- tblsp coriander powder (dhana) 3 tblsp cumin powder (jeero) 2.5-3 tsp turmeric powder (or fresh) 2 tblsp chilli powder 60ml vinegar 4-5 grated tomatoes 1 sachet tomato paste 8 potatoes, peeled and cut 1 litre water Optional: extra chilli powder. 10 cups washed rice 1 bunch coriander In a large deep pot add the ghee and switch your stove on to medium heat. Toast your whole spices in the ghee. Add the onions and sauce until translucent. Spice the chicken with the ground spices, vinegar, ginger garlic masala, green chilli, tomato and tomato paste. Add to your pot and cook for 5-8 minutes. Add your potatoes as well as the water. Close the lid and cook for 8-10 minutes. Taste and top up with extra spices as required. Then add the washed rice, and add 1 tsp salt for each cup of rice. Mix well and top up with water to cover the top as per the video. Close the lid and leave to cook until the rice has absorbed much of the water. Mix to turn entire mixture and then cover with wet baking paper and foil. Then steam further until completely done either on the stove top on low or in the oven. Enjoy #Fehmz
