There isnāt one perfect list for everyone with kidney disease. In this video, I discuss red bell peppers, green beans, zucchini, asparagus, and cauliflower as versatile choices that are naturally low in sodium and phosphorus and can fit into a lower-potassium eating pattern when appropriate. Does everyone with kidney disease need to avoid potassium? No. Potassium needs depend on your kidney function, blood potassium level, medications, dialysis status, and other individual factors. Some people with CKD need to limit potassium, while others may not. Are fresh vegetables better than canned vegetables for kidney disease? Fresh and plain frozen vegetables can make it easier to control added sodium. If you use canned vegetables, look for no-salt-added or lower-sodium options. Draining and rinsing regular canned vegetables can also help reduce some of the sodium. Is extra-virgin olive oil safe to cook with? Yes. Good-quality extra-virgin olive oil can be used for normal home cooking, including sautĆ©ing and roasting. Avoid heating oil until it is smoking. Is cauliflower better than potatoes for kidney disease? It depends on your individual nutrition needs. If youāve specifically been told to limit potassium, cauliflower can sometimes be easier to fit into your eating plan than a large serving of potatoes. That does not mean potatoes are automatically ābadā or that everyone with CKD needs to avoid them.
