The recipe: killer banana muffins Cream 125 g butter until light and fluffy. Beat 2 extra large free range eggs and add gradually to the butter, creaming as you go. Add 2 tablespoons yoghurt, 1 teaspoon vanilla essence and 60 g raw chopped almonds. Fold in 6 ripe mashed bananas. Sift together 250 g flour, 1 teaspoon bicarbonate of soda and a pinch of salt. Fold into the banana mixture. Pour into a muffin tray lined with paper. Top with blueberries or granola. Bake at 180°C for 50 - 60 minutes until golden brown and firm.
