In 1868, on a remote salt island in Louisiana, a bankrupt former banker began experimenting with peppers, vinegar, and salt. His bank had collapsed during the chaos of the American Civil War. Using crushed peppers, island salt, and vinegar, he created a fermented pepper sauce that he aged in oak barrels and bottled in old cologne bottles. At first, he simply gave the sauce to friends. Then grocers started asking for more. That experiment would become Tabasco, one of the most recognizable food brands in the world. Today, Tabasco is sold in nearly 200 countries, produced using a fermentation process that still closely resembles the original recipe developed in the 1860s. The company remains 100% family-owned, with the McIlhenny family continuing to run the business more than 150 years later.
