টাইটেল দেখে ঘাবড়ে যেয়েন না। আজকে আমি রমজান নিয়ে আমার অভিজ্ঞতার কথা বলবো। একটা প্রিডমিন্যান্টলি মুস্লিম কালচারে একজন নন মুস্লিম কীভাবে রমজানকে দেখেছে হয়তো সেটার একটা আকর হতে পারবে এই আলাপটা। আমার জন্ম আর বেড়ে ওঠা বগুড়ায় আপনারা জানেন। রমজান এলে বগুড়ার সেই সময়ের ছোট ছোট রাস্তাগুলো হরেক রকম ইফতারির সুগন্ধে ভরে উঠতো। আমার বাসার সামনেই একটা মিস্টির দোকান ছিলো রমজান এলে সামনের ফাকা জায়গায় টেবিল পেতে নানা ইফতারির পসরা সাজিয়ে বসতো। ভদ্রলোক ছিলেন হিন্দু, কিছু স্পেসাল স্বাদের ইফতারি আইটেম থাকতো যেমন কচুরি আর তিনি ভাজার সময়ে ব্যবহার করতেন ঘি। কী দারুণ গন্ধে ভরপুর হয়ে যেতো চারিদিক। ইফাতারির সময়ে যেই ছোলার আইটেম হয় সব জায়গায় বগুড়াতে সেটার একটা স্পেসাল রেসিপি আছে নামও আছে আলাদা বুট বিরানি। এটাই বগুড়ার ইফতারের মুল আইটেম। বগুড়ার মানুষ বুট বিরানির সাথে বুন্দিয়া মিশিয়ে খায়। নোনতা, ঝাল তার সাথে মিস্টি। বুন্দিয়ার কমনীয়তার সাথে বুটের কিঞ্চিৎ কাঠিন্য মিলে এক অপুর্ব এক্সপেরিয়েন্স হতো। আমি পরে বগুড়ার বাইরে একই জিনিস করে দেখেছি ওই স্বাদ আর পাইনি। আপনাকে ওইখানে, ওই রাজাবাজারের পাশে বসে সেই মাহেন্দ্রক্ষণে ওটা খেতে হবে নইলে সেই স্বাদ আপনি পাবেন না। রাজশাহী মেডিক্যালে পড়ার সময়ে লক্ষীপুর বাজারে একটা চমৎকার ইফতারির বাজার বসতো। সম্ভবত রাজশাহীর সেরা ইফতারি ওখানেই পাওয়া যেতো। This is #PinakiBhattacharya 's #TheUntold Exclusive.
