Chocolate Croissant Bread Pudding with Stabilized Whipped Cream 2 1/4 cups milk 4 eggs 3/4 cups sugar 6 Tablespoons unsweetened cocoa powder 1/2 teaspoon vanilla 1/4 teaspoon salt 3 large croissants, cut into 1 inch pieces, divided 1 cup chocolate chips, divided Prepare a 1 1/2 quart casserole dish with high sides that will fit into your slow cooker by coating with a nonstick cooking spray. Beat milk, eggs, sugar, cocoa powder, vanilla, and salt in a mixing bowl with a hand mixer. Layer half of the cut up croissants and half of the chocolate chips in the dish. Pour half of the egg mixture over the bread and chips. Repeat these layers with the remaining croissants, chocolate chips, and egg mixture. Let this rest 5 to 10 minutes to allow the bread to soak up the custard mixture. Pour one cup of water into your slow cooker. Place a rack or trivet into the slow cooker and then place the casserole on the rack. Place the lid on the slow cooker and cook on low for four hours or until the bread pudding is cooked throughout. STABILIZED WHIPPED CREAM 1 cup heavy whipping cream 2 Tablespoons powdered sugar 1 Tablespoon instant vanilla pudding powder 1/2 teaspoon vanilla Use a mixing bowl and whisk that have been in the freezer for about an hour. Place the heavy whipping cream in the mixing bowl and beat one minute. Add the powdered sugar, instant vanilla pudding powder, and vanilla and whisk again until it is almost to stiff peaks. Be careful not to over whisk or you’ll have butter. Store in the refrigerator. When the chocolate croissant bread pudding is completely done, remove the casserole dish from the slow cooker. Spoon the bread pudding into bowls and top with the stabilized whipped cream.
