Chow Mein Recipe: 如何制作炒面 Today we are making Chow Mein. Chow Mein means stir fried noodles in English. It’s a very popular street food that you can find in every neighborhood in China. Almost every Chinese restaurant has Chow Mein on their menus. People love this dish due to its smoky flavor and incredible savory taste. In this video I am going to show you guys my tips for making authentic tasting Chow Mein! Ingredients: 3oz dry egg noodles 1/2 onion 1.5 oz bean sprouts 2 small size Bok Choy 5 cloves of garlic 1/2 cup of spring onion 1 egg 1 tsp light soy sauce 1/2 tsp dark soy sauce 1 tsp oyster sauce 1 tbsp cooking wine 2 tbsp cooking oil Directions: Let’s start with preparing the veggies. First, we are going to cut half of onion into thin slices. Get 2 Bok choy and cut the roots off. Separate the leaves from the stalks and cut them into shreds. Take one 1 spring onion. Also Separate the green part from the white part and cut them into shred. Slice about 4-5 garlic cloves into thin pieces. Crack one egg and mix well. Turn on the stove and add some hot water, 1/4 tsp salt and 1/4 tsp cooking oil into the pot. Once water starts to boil, put about 3 OZ noodles in and let it cook for about 2-3 mins. I am using Chinese style dry egg noodles here. If you don’t have that, you can also use spaghetti noodles. once the noodles are cooked, we will need drain them and put them into the cold water, soak for 1-2 mins to stop the cooking process. Drain the noodles again and spread them out on a tray. Once the noodles are dry, add 1 tsp of cooling oil, mix well. This way noodles will stay crunchy and won’t stick together when we cook them. Next, we are going to make the sauce. Put the garlic slices into a bowl and add 1 tsp of light soy sauce, 1/2 tsp of dark soy sauce, 1 tsp of oyster sauce, 1 tbs of cooking wine and 1/4 tsp of salt. Mix well. Preheat the wok with median high heat until we can see the smoke. Add 1 tbs of cooking oil and eggs. Stir fry and break the egg into small pieces. Remove the eggs. Lower the heat to median and put the noodles in. let it cook for about 1-2 mins. Flip to the other side and cook for another 1-2 mins. once both sides are crispy, remove them and set aside. Add 1 tbs of cooking oil and cook the sprouts and onions with median high heat for about 1 min and keep adding the shredded Bok Choy stalks and white part of the green onions. Stir fry for about 30 seconds. And then bring the noodles back, pour our sauce in, mix well. Keeping adding the Bok Choy leaves and green part of the spring onion. Stir fry for about 30 seconds. Finally add the eggs and mix everything together.
