Complete recipe Ingredients: 3 lbs (approx. 1.4 kg) or 5 large carrots 3 tablespoons water 1 teaspoon ghee (optional) 1 quart whole milk Handful of almonds and cashews, broken into small pieces 4-5 pods of cardamom 7-8 threads of saffron 1-inch piece of cinnamon stick (or 3 pinches of cinnamon powder) 1.6 oz (approx. 45 grams) sugar (adjust to taste) Raisins (optional) Instructions: 1. Peel and chop the carrots into big pieces. 2. In an Instapot or pressure cooker, add the chopped carrots, 3 tablespoons of water, and optionally, 1 teaspoon of ghee.Cook the carrots on pressure cooker mode for 6-7 minutes. If using a regular pressure cooker, take 2 whistle. 3. While the carrots are cooking, pour 1 quart of whole milk into a heavy-bottomed pan and place it on the stove over low to medium flame. Stir occasionally to prevent sticking. 4. Prepare the dry fruits and spices by breaking the almonds and cashews into small pieces. Grind the cardamom pods, saffron threads, and cinnamon stick into a fine powder using a mortar and pestle. 5. Keep stirring the milk as it reduces to half its quantity. 6. Once the carrots are tender, mash them well using a masher. 7. Add the mashed carrots to the simmering milk on the stove. Stir the mixture every five minutes, allowing it to cook thoroughly. This will take about 30 to 45 minutes. 8. As the mixture thickens, add the prepared dry fruits, spices, and sugar to taste. Stir everything together, and let it cook for another 10 to 15 minutes until the liquid reduces. 9. Optionally, add raisins for extra sweetness and texture. 10. Once the mixture reaches a thick, fudgy consistency, remove it from the heat. 11. Serve the Gajar Halwa immediately, or chill it in the freezer for a few hours for a refreshing treat.
