These might be the crispiest pickles I’ve ever made. The strange part is what went into the jar. I washed the cucumbers, soaked them in ice water for extra crunch, cut off the blossom end, then packed the jar with dill, garlic, bay leaves, hot pepper, and as many cucumbers as I could fit. Then I added salt and flour. The flour gives the lactic acid bacteria another source of carbohydrates to work with while the cucumbers ferment. Water goes in, the jar gets shaken up, the airlock goes on, and fermentation takes over. The finished brine gets extremely cloudy, partly because of the flour. Then came the crunch.
