One of my dad’s friends casually swiped one right off my plate 😆😒 I remember thinking… did he really just do that? 🤣☠️ ⸻ 🧰 Kitchen tools • Apple corer • Zucchini corer (I sell these & ship nationwide — waiting on shipment) ⸻ 🛒 Shopping list • 30 medium Mexican squash • 4 cups rice • 3 cups Calrose • 1 cup parboiled 👉 Measure your rice, then soak for 30 minutes ⸻ 🥣 Broth ingredients • 3 bay leaves • 2 tbsp salt • 2 tbsp tomato paste • 1 tbsp seasoning (to taste) • Water (enough to fully submerge) ⸻ 🍚 Rice mix • 1½ lbs coarse ground beef • 2 oz tomato paste • 1 tbsp lemon pepper or citric acid • 2 tbsp salt • 2 tbsp allspice • ½ cup ghee or butter Mix everything together, then add your soaked, washed, and drained rice. ⸻ 🍋 Final pot topper • Salt to taste • About ½ gallon water • Lemon juice • Canned tomato 🍅 Top off the stuffed squash with the final ingredients. Place the pot on the stove and bring to a boil (about 30 minutes), then reduce heat and simmer for 1½ hours. Always taste-test before turning the stove off to make sure the squash is fully cooked.
