Getting to orbit isn't about going up, it's about going sideways really fast. Orbit means falling around the Earth while the ground curves away beneath you, which in low orbit takes around 17,500 mph, close to five miles every second. The first stage pushes the rocket through the thick lower atmosphere and lets go at roughly a third of that speed, then flies back to land. The second stage, with one engine and a huge vacuum nozzle, tips toward the horizon and does most of the speeding up. On SpaceX's webcast you can watch altitude level off while speed keeps climbing. Then the engine shuts off and the stage keeps falling around the Earth. The booster flies again, but the second stage is thrown away every flight, which is why SpaceX designed Starship's upper stage to come back.
