When I was a child, I was an incredibly picky eater. I didn’t like chicken or meat at all. Whenever we visited my grandmother, she would always ask me, “What would you like me to make for you?” My answer was always the same: “Something without chicken or meat.” And somehow, she always knew exactly what to make. She would go into the kitchen and prepare this delicious Gilani Shish Andaz just for me. This stew is completely plant-based — made with walnuts, eggplants, onions, pomegranate molasses, and traditional spices, with no meat or chicken. I used to sit and watch my grandmother cook, paying close attention to every movement of her hands. But the most fascinating part for me was when she would heat an iron spatula, locally called Assam or Kacheh, until it was very hot, and then place it directly into the stew. This traditional technique would make the stew darker and more beautiful, while cooking the acidic stew in contact with the hot iron could also add some iron to the food, making it a traditional way of enriching the dish with this essential mineral. The taste of my grandmother’s cooking has stayed with me all these years. Some flavors are more than just food — they carry memories, warmth, and the people we love. As I made this dish, I found myself remembering those days in my grandmother’s kitchen, watching her hands move as she cooked. This recipe is not just a traditional Gilani dish for me. It is a small piece of my childhood, brought back to life. 🔮Ingredients for 4–5 servings: 350 g walnuts 5–6 eggplants 3 medium onions 2 tbsp pomegranate molasses Golpar (Persian hogweed spice), to taste Turmeric, to taste Black pepper, to taste Cinnamon, to taste Salt, to taste If this video added value to you or made your day a little better, you can support our work through the Super Thanks button below.
