Nashville is the country music capital and everyone knows it. Anthony Bourdain spends the hour on everything else. This is one of the fastest-growing metropolitan areas in America, taking in eighty to a hundred new residents every single day, and the people changing it are almost all from somewhere else. At a Sunday cookout around Pat Martin’s fire pits, four of the chefs who rebuilt this city’s food — Tyler Brown, Tandy Wilson, Sean Brock and Martin himself — eat ninety-day aged ribeye and greasy beans, and when Bourdain asks who is actually from here, one hand goes up. Carpetbaggers, the whole table. He eats hot fries at Dino’s that he calls redneck poutine, and a proper meat and three downtown, where a Grammy-nominated producer tells him that the lunch counter is the closest thing to an honest cross-section of the city you will find. The music runs deeper than Lower Broadway. It is a ten billion dollar a year economy here, employing more musicians than anywhere else in the country, and the standard is brutal: there is an old joke that it takes one Nashville musician to change a light bulb and twenty to stand around saying they could do it better. Bourdain also goes looking for the half of the history that rarely gets told. In the fifties and sixties the city had two music scenes running in parallel — Hee Haw for one audience, Night Train for the other — and Jefferson Street, where Jimi Hendrix, Little Richard, B.B. King, Aretha Franklin and Ray Charles all played. There was no Broadway then. There was Jefferson Street, and most of it has since been sold to developers. Then there is Margo Price, who lost her family’s farm as a child and one of her twin sons as an adult, sold her car and her wedding ring to cut an album in three days at Sun Studio, was turned down by thirty labels, and ended up on Jack White’s Third Man Records with the number one country record in Britain. There is also pain, most of it self-inflicted. Bolton’s hot chicken takes Bourdain apart on camera and, by his own account, for twelve hours afterwards. He follows it with a cryotherapy chamber at minus three hundred degrees alongside Dean Fertita of Queens of the Stone Age, which goes about as well as you would expect. And it ends at a house party at Alison Mosshart’s place, where The Dead Weather and The Kills play the living room, a tattoo artist works a corner all night, and the next morning everyone meets for bloody marys and bowling. Nashville, as Bourdain puts it, is a welcoming place and a forgiving one.
