Episode 7 of I Need to Try ThisπŸ’πŸ»β€β™‚οΈ, where I try the viral desserts taking over the internet πŸ‘€ Today, I’m making WATERMELON POPPING BOBA, which almost felt like a science experiment in my kitchen πŸ‰πŸ§‹ I’ve been seeing these little treats all over my feed and just had to try making them at homeπŸ₯³ They’re so fun, refreshing, and so satisfying to make πŸ₯°βœ¨ Ingredients * 250 ml watermelon juice * 80 ml water * 4 g sodium alginate * 800 ml water * 24 g calcium lactate Method Add fresh watermelon cubes to a blender and blend until smooth. Strain if needed to remove any pulp or seeds. Combine the watermelon juice, 80 ml water and sodium alginate in a blender. Blend until everything is completely dissolved and the mixture is smooth. Let the mixture rest for 15–20 minutes, or until the air bubbles disappear. Meanwhile, combine calcium lactate with 800 ml warm water and stir until completely dissolved. Allow the solution to cool to room temperature. Once the watermelon mixture is ready, use a ΒΌ teaspoon measure or dropper to gently drop small portions into the calcium bath, one at a time. You will notice small spheres forming immediately. Allow the spheres to sit in the calcium bath for 1–2 minutes until a thin membrane forms around them. Gently remove the popping boba and rinse in clean water to remove any excess calcium solution.
