Creamy Chili Crisp and Caramelized Onion Spaghetti Serves 4-6 Ingredients For the sauce: 115 g butter, divided 30 ml olive oil 400 g white onion, thinly sliced 24 g garlic, finely minced 30-60 ml chili crisp, depending on your heat preference 85 g honey 60 ml soy sauce 5 g paprika 3 g garlic powder 2 g ground black pepper 1 g dried Italian seasoning 320 ml half-and-half 100 g freshly grated Parmesan For the pasta and serving: 450 g dry thin spaghetti Salt for the pasta water 250 ml reserved pasta water, as needed Chopped fresh parsley Extra chili crisp, to finish Method 1. Melt half the butter with the olive oil in a wide skillet over medium-low heat. Add the onions and cook for 20-30 minutes, stirring regularly, until softened and lightly golden. Lower the heat if they begin browning too quickly. 2. When the onions are nearly ready, cook the spaghetti in salted boiling water until al dente. Before draining, scoop out 250 ml of the cooking water and set it aside. 3. Stir the remaining butter and garlic into the onions. Cook for about 1 minute, just until the garlic becomes fragrant. 4. Add the chili crisp, honey and soy sauce, stirring to distribute everything through the onions. 5. Turn the heat to low. Stir in the half-and-half, paprika, garlic powder, black pepper and Italian seasoning. Let the sauce gently simmer for 3-5 minutes, stirring occasionally. Avoid a vigorous boil. 6. Add the Parmesan in small handfuls, stirring until each addition melts into the sauce. 7. Transfer the drained spaghetti to the skillet and toss thoroughly. Add the reserved pasta water a little at a time, using only enough to make the sauce coat the noodles smoothly. 8. Divide among plates and finish with chopped parsley and an extra spoonful of chili crisp. Serve immediately.
