HIGH PROTEIN BREAKFAST SWEET POTATOES Here is another healthy breakfast idea thats so easy and so good. This has 402 calories, 43g protein, 28 net carbs and it keeps you full for hours with the protein, slow digesting carbs, and it’s also high fiber. So if you get hungry a couple hours into the day, try making this and see the difference. Here is how I made it (makes 4 servings) 1.Slow roast 4 sweet potatoes (about 125g each) in the oven at 350°F for 70-80 mins. Your cook time depends on thickness, so if you’re using a larger potato, just got a bit longer. At the end, turn off the heat and let them continue cooking in the oven if possible as the oven cools down. This gets the best texture. 2.To the sweet potato I added 1.5 servings cottage cheese I use the 2% good culture cottage cheese here. 3.Then, prep your favorite type of eggs. You can add sunny side up eggs or scrambled eggs, or even poached eggs. I like whiskin 2 eggs and 2 egg whites since the whites add more protein. Get a pan on low heat, add the eggs, and gently bring the eggs back and forth on low heat before adding it on top of the sweet potato. 4.Top with as much fresh herbs like cilantro or parsley that you like, some finely diced red onion, chipotle hot sauce, some of my creamy sriracha sauce, or anything else you like! 5.For the sauce (this normally makes 4 servings, but I stretched it to all 6)… mix 2 tbsp mayonnaise with 1/4 cup sriracha, 2 tbsp rice vinegar, 1/2 tsp soy sauce, 2 tsp powdered monk fruit sweetener, the juice of 1 solid lime, 1 grated garlic clove, and 1 thinly sliced scallion or a handful of chopped cilantro. Season with salt and pepper, mix it up, taste and adjust as you wish. As always, modify any of the serving sizes as you wish based on your own goals. You can add more egg, more cottage cheese, use a smaller sweet potato, not add avocado. You do you! ENJOY! . . . #healthyrecipes #healthyfoodshare #highprotein #breakfastideas
