Bengali beef curry, also known as "kosha mangsho," is a delicious and flavorful dish from the Bengal region of India and Bangladesh. It's typically made using slow-cooked beef with aromatic spices and a thick, rich gravy. Here's a recipe to help you make Bengali beef curry: Ingredients: 500 grams beef, cut into medium-sized pieces 2 onions, finely chopped 2 tomatoes, pureed 3-4 garlic cloves, minced 1-inch piece of ginger, grated 2 green chilies, slit 2 teaspoons turmeric powder 2 teaspoons red chili powder 2 teaspoons cumin powder 2 teaspoons coriander powder 1 teaspoon garam masala powder 1 teaspoon sugar 4 tablespoons mustard oil (you can substitute with vegetable oil) Salt to taste Fresh coriander leaves for garnish Instructions: Heat the mustard oil in a large, heavy-bottomed pan or pressure cooker over medium heat. Add the chopped onions and sauté until they turn golden brown. This step is crucial as it helps develop the depth of flavor. Add the minced garlic, grated ginger, and slit green chilies to the pan. Stir and cook for a couple of minutes until the raw smell disappears. Now, add the beef pieces to the pan and cook them on high heat until they are browned on all sides. This process helps seal in the flavors. Reduce the heat to low and add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the beef with the spices. Cook the beef with the spices for a few minutes, stirring continuously to prevent burning. Add the tomato puree and sugar to the pan, mix well, and cook for a couple of minutes. If using a pressure cooker, add a little water (about 1/4 cup) and pressure cook the beef for about 20-25 minutes until it becomes tender. If using a regular pan, add about 1 cup of water, cover, and simmer for 1.5 to 2 hours until the beef is tender. You may need to add more water if required. Once the beef is tender, increase the heat to medium-high and cook until the gravy thickens. Stir occasionally to prevent sticking Sprinkle the garam masala powder over the curry and give it a final mix. Check for seasoning and adjust salt if needed. Garnish with freshly chopped coriander leaves. Your Bengali beef curry is now ready to be served. It pairs well with steamed rice, naan, or roti.
