Bihari Wedding Style Chicken Gosht Pulao | Authentic Bihari Gosht Pulao | Chicken Pulao Recipe Authentic Bihari Wedding Style Chicken Gosht Pulao — a delicious combination of fragrant pulao rice served with juicy, tender chicken in a rich and flavorful Bihari-style salan. In this recipe, the chicken is cooked separately with aromatic whole spices, yogurt, fried onions and traditional spices, while the pulao is prepared separately for perfectly fluffy and flavorful rice. Finally, the hot salan is served generously over the pulao for that authentic Bihari wedding-style experience. Perfect for family dinners, special occasions, daawats and festive meals. 🧂 Main Ingredients For Chicken Gosht/Salan: Chicken – 1 kg Mustard oil – 150 ml Potatoes – 3 Onions – 2 medium + 1 small Yogurt – ½ cup Ginger-garlic paste – 1½ tbsp Coriander powder – 2 tsp Kashmiri red chilli powder – 1 tsp Red chilli powder – 1 tsp Roasted cumin powder – 1½ tsp Black pepper powder – ½ tsp Turmeric powder – ¼ tsp Salt – 1½ tsp Bay leaves, cinnamon, green & black cardamom, cloves and black pepper Fresh coriander For Pulao: Sona Masoori rice – 2 cups / 400 g Oil – ⅓ cup / 80–90 ml Onion – 1 cup Shahi jeera – 1 tsp Bay leaves – 2 Green cardamom – 3–4 Black cardamom – 1 Black pepper – 8–10 Cloves – 4–5 Ginger-garlic paste – 1 tsp Hot water – about 4 cups Salt – 1½ tsp Kewra water – 1 tsp Red-orange food colour – optional ⏱️ Timing Preparation: 30 minutes Cooking: 50–60 minutes Total: Approximately 1 hour 30 minutes Servings 4–5 people Tips Mustard oil gives this pulao its authentic Bihari flavour. Fry the potatoes only until they develop a light golden crust; they will cook completely with the chicken. Don't use vemuch onion to the gravy, otherwise the salan can become sweet. Properly bhuno the masala until the oil separates for the best flavour. Soak the rice for about 30 minutes and drain it well before cooking. Avoid over-stirring thery sour yogurt. Don't add too rice to keep the grains intact. Sella rice is not recommended for this particular recipe. Basmati rice can be used instead of Sona Masoori; adjust the water according to the rice. Kewra water gives the pulao its beautiful wedding-style aroma. Rose water can be used as an alternative. Serve the hot pulao with chicken gosht/salan poured generously over the top. 🔖 Hashtags #BihariGoshtPulao #ChickenGoshtPulao #BihariPulao #BihariWeddingStyle #ChickenPulao #GoshtPulao #AuthenticBihariRecipe #BihariCuisine #WeddingStylePulao #ChickenRecipe #PulaoRecipe #IndianRecipes #CookWithLubna
