PANI POORI CHAAT . 6 gm protein per serving, this Pani Poori Chaat is an excellent twist to regular pani poori, and I know you and your family will absolutely love it! . Ingredients . For the Chutney: * 1 big bunch coriander * 1 big bunch mint leaves * 3-4 garlic cloves * 4-5 green chillies (adjust to taste) * 1 small piece of ginger * 1 medium boiled and peeled potato * 2-3 tbsp tamarind pulp * 1/2 to 1 fresh lime juice * 2 tsp black salt * 1 small piece of jaggery * Regular salt to taste * 1/2 cup water . For the Chaat: * 2 medium mashed potatoes * 1 tsp roasted and coarsely pounded whole coriander seeds * 1/2 tsp black salt * 1/2 tsp chaat masala * 1 tsp dhania powder * 1 tsp roasted cumin seed powder * 1/2 tsp chili flakes * 1 cup boiled kala chana * 2 medium onions, finely chopped * 2 medium tomatoes, finely chopped * 1 whole fresh pomegranate (seeds extracted) * 1 cup chilled water * Fresh coriander leaves (for garnish) * Masala boondi * Pooris (for serving) . Recipe 1. In a blender jar, combine the coriander, mint leaves, garlic, green chillies, ginger, 1 boiled potato, tamarind pulp, lime juice, black salt, jaggery, regular salt, and 1/2 cup water. Blend everything until smooth to create the green chutney. 2. In a large mixing bowl, take the 2 mashed potatoes. 3. Add the coarsely pounded coriander seeds, black salt, chaat masala, dhania powder, roasted cumin powder, and chili flakes. Mix the spices well with the potatoes. 4. Serve the chaat mixture chilled alongside crisp pooris. . Zero-Waste & Substitutes * Zero-waste: Do not throw away your coriander stems; they hold massive flavor and should go right into the blender for the chutney. Keep your potato peels, toss them with a little oil and salt, and air-fry them for a crispy evening snack. * Substitutes: If you are out of jaggery, you can use a couple of pitted soft dates to sweeten the chutney. You can also easily swap kala chana for boiled whole moong or white kabuli chana. .
