Portion: 4-5 pax Preparation Time: 05 mins Cooking Time: 15–20 mins Ingredients: For Rasam Base Paste: Dry red chilli 2 pcs Garlic with skin 7–8 cloves Curry leaves 10–12 pcs Coriander leaves 1 handful Black pepper 15–16 pcs Green chilli 3 pcs Tomato 2 pcs For Garlic Rasam: Oil 2 tbsp Garlic, crushed 5–6 cloves Dry red chilli 1 pc Curry leaves 5–6 pcs Mustard seeds ½ tsp Prepared rasam base paste Turmeric powder ½ tsp Salt 1 tsp Tamarind pulp 2 tbsp Water as required For Tadka: Coconut oil 2 tbsp Mustard seeds ½ tsp Curry leaves 4–5 pcs Hing ½ tsp For Garnish: Coriander, chopped 1 tbsp Method: Step 1: Prepare the Rasam Base Paste Take dry red chillies, garlic with skin, curry leaves, coriander leaves, black pepper, green chillies and tomatoes in a blender jar. Blend everything together into a fine and smooth paste. Add a small quantity of water while blending only if required. Keep the prepared rasam base paste aside for further use. Step 2: Start the Garlic Rasam Heat oil in a deep pan over medium heat. Add the crushed garlic and sauté until aromatic and lightly golden. Add the dry red chilli and curry leaves. Add mustard seeds and allow them to crackle. Sauté everything together briefly to release the flavours into the oil. Step 3: Cook the Rasam Base Add the prepared rasam base paste to the pan. Mix thoroughly with the garlic and tempering. Cook the paste over medium heat, stirring occasionally to prevent it from sticking to the bottom. Continue cooking until the tomatoes are cooked and the raw aroma of the paste disappears. Step 4: Season the Rasam Add turmeric powder and salt to the cooked base. Add tamarind pulp and mix thoroughly. Cook for another 1–2 minutes to combine the tamarind with the masala. Gradually add water and mix well to achieve a thin and pourable rasam consistency. Step 5: Simmer the Rasam Increase the heat and bring the rasam to a gentle boil. Once it starts boiling, reduce the heat to low. Allow the rasam to simmer gently for 5–7 minutes. This will allow the garlic, pepper, chillies, tamarind and curry leaves to infuse properly into the rasam. Check the salt and sourness and adjust if required. Step 6: Prepare the Final Tadka Heat coconut oil in a small tadka pan. Add mustard seeds and allow them to crackle completely. Add curry leaves carefully and allow them to splutter. Add hing and immediately switch off the heat. Pour the hot tadka directly over the simmering rasam. Step 7: Finish & Serve Add freshly chopped coriander to the rasam. Mix gently and simmer for another 30 seconds. Switch off the heat and keep the rasam covered for 1–2 minutes to retain the aroma of the final tadka. Serve the Garlic Rasam hot. #GarlicRasam #RasamRecipe #SouthIndianRecipes #ChefAjayChopra #IndianCooking Subscribe to my channel here : https://www.youtube.com/channel/UCjC5zJ25kXB0mwKxi4erOrg \ For more information and many more recipes, Visit us at: https://www.chefajaychopra.com For more information and many more recipes, Visit us at: https://www.chefajaychopra.com/food-r...
