These PISTACHIO DONUTS surprised me! #summervibes ✨Recipe: 1 pack of Hawaiian sweet rolls Cream Filling: 5 yolks 2 cup whole milk 3 tbsp corn starch ½ cup sugar 6 ¾ oz pistachio cream 1 tsp vanilla extract Sugar Candy: 2 cup white sugar 1 cup water Directions: 1. Make the pistachio cream filling: In a small saucepan, bring milk and vanilla to a boil. Remove from stove and filter the milk. In a separate bowl, pour egg yolks and sugar and whisk vigorously until combined. Add the sieved cornstarch and stir until incorporated. Put on the stove and stir constantly with a whisk. Take off the stove immediately once it starts to thicken (at about 152.6F). Add pistachio cream and mix well. Pour the cream into a bowl and cover with cling wrap as close to the mixture as possible. Cool at room temp for 2-3 hours. 2. Fill the Hawaiian sweet rolls with the pistachio cream. Use a knife or chopstick to make a hole and with a piping bag, pipe into each roll until it can’t give. 3. Make the candy top coat: pour sugar and water in a saucepan on medium heat. Do not stir. Bring to a boil and simmer until it is thick and a bit amber coloured (temperature should reach exactly 300F, no more no less). Remove from heat and do a test by dipping a skewer into the sugar mixture and immediately into iced water. If you bite it and it cracks it’s ready. 4. Moving very quickly and safely, coat the top of the filled Hawaiian rolls with this sugar coat and rest aside on parchment paper. 5. Listen to that crack and enjoy 😉
