Our Jaisalmer food exploration begins with a visit to Salkha village, where we discover the traditional food and cooking practices of the Thar Desert. From a home-cooked village meal to an elaborate meat preparation that takes hours to cook underground, this journey introduces us to the ingredients, techniques and culinary traditions that make this region so fascinating. At Mahendra Ji’s home, his family welcomes us into their kitchen and shows us how they prepare a traditional village meal. We watch as they cook guar phali ki sabzi and sangri ki sabzi, two preparations made with ingredients that have long been part of desert cuisine. Guar phali, or cluster beans, and sangri, the dried beans of the khejri tree, reflect the importance of locally available produce in a region where growing food can be challenging. Bajre ki roti and kadhi complete the spread, bringing together ingredients and dishes that have sustained communities in Rajasthan for generations. Cooked over a wood fire, the meal is simple, wholesome and deeply connected to the land. Our visit also takes us to the Rajkumari Ratnavati Girls’ School, a remarkable architectural project in the desert dedicated to girls’ education. Built using Jaisalmer sandstone, its distinctive design draws from the landscape and traditional architectural elements while creating a space designed for the region’s harsh climate. Next, we head to Kanak Resort, where Arif Ji and his team are ready to introduce us to the traditional preparation of khad meat. The process begins with a raan marinated in basic spices. It is wrapped in roti, enclosed in a gunny bag and carefully lowered into a pit filled with embers. Covered and left to cook slowly, the meat will spend the next three to four hours underground, allowing the retained heat to do its work. With the khad meat left to cook, we head to a nearby spot to enjoy tea and watch the sun set over the desert. Back at Kanak Resort, the evening continues with a Rajasthani folk dance performance, offering us a glimpse of the region’s cultural traditions. We also witness the preparation of roat, a large, thick flatbread that forms part of this traditional food experience. The evening continues with laal maas, the famous Rajasthani meat curry known for its rich flavours and generous use of red chillies. After three to four hours, it is finally time to uncover the khad meat. The gunny bag is opened, revealing the raan that has been slow-cooking beneath the embers. The aroma and the sight of the finished preparation build anticipation as we finally sit down to taste the meat, along with the other dishes prepared for the evening.
