It is a flavorful and aromatic dish that is made with basmati rice, chicken, and a blend of spices. Here is a recipe for making Hyderabadi chicken biryani at home: Ingredients: 2 lbs chicken, cut into pieces 2 cups basmati rice 2 onions, thinly sliced 2 tbsp ginger garlic paste 1 cup plain yogurt 1 tsp red chili powder 1 tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala powder Salt to taste 4-5 green cardamom pods 2-3 black cardamom pods 2-3 cloves 1 cinnamon stick 1 bay leaf 1/4 cup oil 1/4 cup ghee Fresh mint leaves and coriander leaves for garnish Fried onions for garnish Instructions: Wash the basmati rice and soak it in water for 30 minutes. In a large pot, heat oil and ghee. Add green cardamom pods, black cardamom pods, cloves, cinnamon stick, and bay leaf. Fry for a few seconds until fragrant. Add the thinly sliced onions and fry until they turn golden brown. Add ginger garlic paste and fry for another 2-3 minutes. Add red chili powder, turmeric powder, cumin powder, coriander powder, and garam masala powder. Fry for 1-2 minutes. Add the chicken pieces to the pot and mix well. Add plain yogurt and salt to taste. Let it simmer for 10-15 minutes until the chicken is cooked through. In a separate pot, boil water with salt and add the soaked basmati rice. Cook the rice until it is 70% done. In a large baking dish, spread a layer of the cooked rice at the bottom. Add a layer of the chicken and gravy mixture on top of the rice. Repeat this process, alternating between layers of rice and chicken, until all the ingredients are used up. Cover the baking dish with foil and bake in a preheated oven at 350°F for 30-35 minutes.
