【歴めし】こと歴史再現めしは、歴史のある食文化を現代に再現しています。 本日は、奈良時代から現代までの約1300年分の「イカの塩辛」を再現し、食べ比べてみました。 718年の『養老令』賦役令に貢納品として記された「烏賊卅斤」と藤原京木簡の「鮒醢」を起点に、奈良から平安前期の宮中で行われていた塩漬けや麹発酵の作法で仕込む古代の調味料「醢（ししびしお）」。 文献上に初めて「塩辛」の語が現れる1028年頃の『今昔物語集』からは、役人に塩辛い肴ばかりを食べさせて喉を渇かせ、酒を飲ませて追い返す説話に基づいた塩辛。 江戸時代に入ると、北前船の船員が考案し加賀藩主が将軍家へ献上した伝承を持つ富山名物「黒作り」や、『守貞謾稿』に記された樽を…
