When Eunice and I flew to Maine we had a short layover at Philly and shared a really good cheesesteak from Tony Luke's at the airport. So I knew I had to try making it at home. I used a 60-day dry-aged ribeye which I thought made the cheesesteak have more crust and flavor. Amazing.
