Over 100 people RSVPād to my first home bakery pop-up in NYC, and most of them had never tried my pastries before. I had 6 days to prep everything from my tiny apartment kitchen, but between guessing how much to bake, scaling recipes, burning an entire batch of butter mochi, and almost losing my black sesame milk rolls the morning of the pop-up, the whole event nearly fell apart. In this video, Iām taking you behind the scenes of what it really looks like to run a home bakery pop-up: planning quantities with no real sales data, prepping 100+ pastries, testing recipes, packaging everything by hand, making last-minute judgment calls, setting up at a cafe, serving customers, and breaking down the final numbers. This pop-up was hosted at AnsÄ Micro Coffee Roastery in Soho with my friend Jean from Casa Sui, who made hojicha lattes while I brought the pastries: mango coconut sago butter mochi, black sesame praline milk rolls, and jasmine matcha ganache madeleines.
