A viral video from Mumbai is showing an unexpected effect of Maharashtra’s food-safety crackdown: chicken lollipops and Manchurian dishes that were once bright red are now appearing pale, brown or almost white. Social-media users jokingly call this the “Tukaram Mundhe effect.” Tukaram Mundhe is the Maharashtra Food and Drug Administration commissioner whose department has intensified inspections of restaurants, hotels, canteens, dairies and food-manufacturing units. In the viral clip, a customer displays lightly coloured chicken lollipops and says restaurants have stopped adding artificial red colouring because they fear FDA action. The dishes look less dramatic and more like ordinary fried chicken, leading to jokes that Mumbai’s famous red chicken has suddenly “lost its colour.” However, it is an exaggeration to say that all chicken dishes across Maharashtra have turned white. The evidence comes mainly from viral videos and reports about some Mumbai restaurants. There is no official FDA statement saying every restaurant has stopped using colour or that all food colouring has been banned. Food colours are not automatically illegal in India. FSSAI regulations permit certain approved colours in specified foods and within prescribed limits. The problem arises when restaurants use prohibited industrial dyes, add colour to foods where it is not permitted, exceed legal limits or fail to disclose and safely handle additives. Excessive colouring is often used to make dishes such as chicken lollipop, tandoori chicken and Manchurian appear brighter and more attractive. Without added red dye, cooked chicken can naturally look golden, brown or pale depending on its marinade and preparation. A lighter colour does not by itself prove that the dish is healthier; hygiene, freshness, oil quality and cooking temperature remain equally important. Mundhe said that approximately 1,400 inspections were conducted during his first two months as commissioner. Around 110 licences were suspended and more than 300 establishments received improvement notices. FDA raids reportedly found cockroaches, dirty equipment, unsafe food storage, adulterated dairy products and reused cooking oil at different establishments. The campaign has also faced questions about procedure and consistent enforcement. Courts and business owners have asked whether establishments received proper opportunities to correct problems and whether government canteens were being inspected as strictly as private restaurants. In simple terms, the pale chicken became a humorous symbol of a serious food-safety campaign. Restaurants may be avoiding unnecessary dyes because inspections have become stricter, but the viral claim of a complete statewide colour ban is overstated.
