試試看苦瓜雞湯不加鳳梨，這樣我更喜歡❤️清爽鮮甜、帶點酸，不苦不膩，好喝極了。 😍很多人煮煮苦瓜雞湯，習慣加鳳梨或蔭鳳梨，不過我自己一直比較不喜歡蔭鳳梨煮出來那種比較厚、比較悶的味道。 所以今天這鍋，我換了一個方式。 苦瓜先稍微煎過，把生青味去掉，也多一點香氣；湯底用雞肉、干貝和昆布慢慢煮出鮮味，再加入番茄，利用番茄自然的酸甜去平衡苦瓜的苦。 最後苦瓜不用煮太久，大概燉個十分鐘，保留一點口感。 煮出來的湯不是很濃很重的那種，而是很清、很鮮。先喝到雞湯和干貝昆布的鮮味，接著有一點番茄的酸甜，最後才是苦瓜淡淡的苦和回甘。 😘吃一口苦瓜，再吃一口番茄，你會發現嘴巴裡好像出現了一種很奇妙的魔法。 苦瓜淡淡的苦，碰上番茄微微的酸甜，兩…
